Shortbread cookies are a perfect, not too sweet cookie! Great for a snack for kids and the whole family.

Ingredients
  1. 1 3/4 C. Almond Flour
  2. 1/4 C. Tapioca Flour
  3. 1/4 tsp. Sea Salt
  4. 1/2 tsp. Cinnamon
  5. 1/2 tsp. Almond Extract
  6. 1/4 C. Maple Syrup or Honey
  7. 1/2 C. Palm Shortening or (1/3 C. Grass- Fed Butter)
Instructions
  1. Preheat oven to 350 Degrees.
  2. Combine Flours, salt, and cinnamon in a food processor or mixer and blend well.
  3. Add extract and syrup into the mixture and combine.
  4. Add the Shortening by the Tablespoon and pulse until all the shortening is mixed in.
  5. Place ball of dough in between two pieces parchment paper and stick in the fridge for 5 minutes.
  6. Remove from fridge and roll it with a rolling pin. About 1" thick. (If you want a faster cookie, roll into balls and place on cookie sheet. Flatten into circles and bake.)
  7. Slice or cookie cut into desired shapes.
  8. Place on lined cookie sheet about an inch apart.
  9. Bake for 9 minutes or until edges are golden brown.
Notes
  1. *The more evenly rolled out the cookies are, the more evenly they will bake!
  2. *If dough is too sticky, put it in the fridge to firm up.
  3. *You can cut the cookies with a pizza cutter and then separate them after they bake.
